You do raise a good question, but I'll have to say that (other than in 
the very early days of cryonics, when they applisoring of their 
men of the few people that existed then) the current groups have 
now existed for decades.

And the different groups haven't made any attempt to deal with the 
problem you describe (unfortunately).

I would say, knowing people in each group, that the most likely event
if one group really looked as if it would go out of existence, is that
one or more of the other groups would take over its patients. They
might turn whole body patients into heads, but they'd still take them
all on. Someday this kind of thing will really happen, and we'll see
what really happens. I would hope that by then some arrangements to deal
with such events would have been developed --- it seems a very simple
thing to do, but everyone has been busy with other issues.

I will add that if you are really concerned by such possibilities, it's
far better that you join one of the societies and try and work toward
such arrangements than that you simply stand to one side without 
signing up because of what MIGHT happen. Sure, you may lose out; but
your risk of losing out if you're signed up is much less than your
risk if you aren't.
