Subject Area: Food Chemistry Title of PhD Thesis: Interactions of Natural Antioxidants in Lipid Systems of Increasing Structural Organization Title of Lecture: Interactions of Natural Antioxidants in Lipid Systems of Increasing Structural Organization Summary: Natural antioxidants are often available as herbal extracts containing mixtures of several compounds with antioxidative properties. Some combinations of tocopherols and plant phenols and carotenoids have been shown to exert antioxidant synergism which is the phenomenon when a number of compounds when present together have a more pronounced effect than derived from a simple addition.
